Matcha means “ground tea” and that’s exactly what it is, stone-ground green tea traditionally drunk in Japan. This beverage has become a popular health drink worldwide.
Matcha is made from the first leaves of spring, only the finest, the leaves of the highest quality. It has an exciting taste and combines the typical Umami flavor with a natural fine sweetness.
Matcha is traditionally prepared with a bamboo whisk (chasen) in a large tea bowl, chawan. Put a teaspoon of matcha tea powder in the bowl and add about 1 tbsp of 80°C water. Whisk with the bamboo whisk into a sticky paste and then add another 70-100ml of water. To get a thick and fine foam, you should whisk back and forth, not in circles. Try to whisk and follow the pattern of the letter M for about 15-20 seconds. The foam that forms is a big part of the taste experience, so Matcha should be drunk as soon as it is served and not sipped over a long period.

- Amino acid: matcha also contains the amino acid L-theanine. Theanine has been shown to affect several different systems in the body, especially systems in the brain. After intake of theanine, for example, levels of the neurotransmitters serotonin and dopamine have been seen to increase.
